THE COFFEE STORY

Limited Microlot Release Monsooned Malabar from India

Cultivated on the Western Coast of India, the Monsoon process exposes coffee beans to the briny ocean air, swelling the beans and imparting an earthy, rich and smooth coffee experience.

We taste salted chocolate and earthy notes with some warming spices with very little bitterness and a smooth mouthfeel.

PROCESS DESCRIPTION:

Originating from a historic age when wooden sailing ships naturally transformed green coffee during long sea voyages, Indian Monsooned Malabar is systematically aged in open-air coastal warehouses to recreate this legendary profile.

After harvesting, washing and drying, these high-grade Arabica beans are spread across brick floors and exposed to humid southwest monsoon winds from the Arabian Sea for 12 to 16 weeks, where they are repeatedly raked and re-bagged.

This deliberate aging process causes the beans to swell to nearly double their size and shift to a pale golden hue, yielding a low-acid, distinctive cup with a rich aroma, deep complexity, and exceptional crema for espresso.
