Why It’s "Super"
The Super Natural process takes the classic Yirgacheffe profile and turns the volume up to eleven. We start with peak-ripeness cherries and seal them in anaerobic drums for 7–10 days. This oxygen-free environment triggers a unique fermentation that develops deep, complex sugars and incredible fruit clarity.
After fermentation, the cherries undergo a precision-controlled slow drying process on raised beds. The result? A cup that boasts a thick, syrupy body and a flavor profile reminiscent of fresh berry compote.
