Sourced from small family farms in the high-altitude Eastern Highland region of Goroka, Papua New Guinea, this lot completely redefines what a decaffeinated coffee can be. Growing between 1,700 and 2,000 meters above sea level on small plots averaging less than one hectare, these heirloom Arusha and Typica varieties deliver a pristine, clean cup character akin to a fine Central American origin, layered with the fascinating rustic depth unique to the Pacific islands.
To preserve its remarkable 86.8-point identity, the green coffee was sent to Vancouver, Canada, where the experts at Swiss Water Decaf utilized their gentle, water-only method to remove 99.9% of the caffeine entirely free of chemical solvents. The result is a stunningly faithful approximation of the original specialty lot, retaining its dynamic acidity, complex sugars, and heavy body.
